PANKOED SWEET POTATO STICKS

Ingredients

  • water
  • orange sweet potato
  • flour
  • salt
  • pepper
  • carbonated water
  • panko (or bread crumbs)
  • oil

Instructions

  1. Peel your sweet potato. Cut it into sticks the width of pub fries, cut the long ones in half.
  2. Bring a pan of water to a boil. Blanch your sticks for a few seconds, just enough to soften them slightly, they’ll cook more in the frying pan!
  3. Pour off the water and let the sticks dry slightly in the pan, no too much, you want them damp so the flour will stick.
  4. While they are cooling and drying, cover the bottom of a plate with flour and add some salt and pepper.
  5. Fill a bowl with carbonated water.
  6. Cover the bottom of a second plate with panko.
  7. Coat each stick individually in flour, briefly dunk in carbonated water, then coat in panko.
  8. When all your sticks are pankoed, put them in the fridge until you’re ready to fry them, they’ll come out crispier if they’re cooled first.
  9. Set a frying pan on medium-high heat and cover the bottom with oil. Fry your sticks briefly on all sides.
  10. Set them on a paper towel to dry.

SUSHI RICE

Ingredients

  • rice
  • water
  • salt
  • rice vinegar

Instructions

  1. Thoroughly wash your rice.
  2. Cover with water in a wide-bottomed pot to about 1/2 an inch above the grains.
  3. Add a good dash of salt.
  4. Cover your pot and bring the rice to a boil.
  5. Reduce heat to low and simmer white rice for 20 minutes, brown for 40-50.
  6. Keep covered for an extra 5-10 minutes before stirring rice vinegar to taste.

  • 1 avocado
  • 2 carrots
  • 1/2 of a cucumber
  • 1 red pepper
  • 2 green onions
  • a handful of pea shoots
  • salty pickled ginger
  • sweet pickled ginger
  • wasabi
  • optional: kewpie mayo

Instructions

  1. Cut the nori into quarters with a pair of scissors.
  2. Peel and julienne carrots and cucumber.
  3. Slice red pepper into slim spears.
  4. Finely chop green onions.
  5. Wash pea shoots.
  6. Plate everybody attractively!
