SUSHI RICE
- rice
- water
- salt
- rice vinegar
- Thoroughly wash your rice.
- Cover with water in a wide-bottomed pot to about 1/2 an inch above the grains.
- Add a good dash of salt.
- Cover your pot and bring the rice to a boil.
- Reduce heat to low and simmer white rice for 20 minutes, brown for 40-50.
- Keep covered for an extra 5-10 minutes before stirring rice vinegar to taste.
