PANKOED SWEET POTATO STICKS
- water
- orange sweet potato
- flour
- salt
- pepper
- carbonated water
- panko (or bread crumbs)
- oil
- Peel your sweet potato. Cut it into sticks the width of pub fries, cut the long ones in half.
- Bring a pan of water to a boil. Blanch your sticks for a few seconds, just enough to soften them slightly, they’ll cook more in the frying pan!
- Pour off the water and let the sticks dry slightly in the pan, no too much, you want them damp so the flour will stick.
- While they are cooling and drying, cover the bottom of a plate with flour and add some salt and pepper.
- Fill a bowl with carbonated water.
- Cover the bottom of a second plate with panko.
- Coat each stick individually in flour, briefly dunk in carbonated water, then coat in panko.
- When all your sticks are pankoed, put them in the fridge until you’re ready to fry them, they’ll come out crispier if they’re cooled first.
- Set a frying pan on medium-high heat and cover the bottom with oil. Fry your sticks briefly on all sides.
- Set them on a paper towel to dry.
