MANGO AND BLACK BEAN SALAD
EVK’s most popular summer bean salad recipe! Serve it with tortilla chips as a salsa too!
SERVES 2-4
Ingredients

- 2 mangos
- 2 red, orange or yellow peppers
- 2 green onions
- 3–4 stems of cilantro
- small red onion
- 2–3 cloves of garlic
- jalapeño pepper
- 2 cans of black beans
- olive oil
- lime juice
- salt
Instructions
- Cube 2 mangos.
- Slice peppers, green onions and cilantro (stems too).
- Finely dice red onion, garlic and jalapeño (add a little at a time!).
- Drain and rinse the black beans.
- Combine everybody in a salad bowl, add a few good splashes of olive oil and lime juice, and a good dash of salt and toss thoroughly.
