East Van Kitchen's most popular summer salad: mangos, black beans, jalapeño, red onion, cilantro and garlic tossed in a light citrus dressing! Served with tortilla chips, this salad recipe works great as a salsa, too!

MANGO AND BLACK BEAN SALAD

EVK’s most popular summer bean salad recipe! Serve it with tortilla chips as a salsa too!

SERVES 2-4

Ingredients

  • 2 mangos
  • 2 red, orange or yellow peppers
  • 2 green onions
  • 34 stems of cilantro
  • small red onion
  • 23 cloves of garlic
  • jalapeño pepper
  • 2 cans of black beans
  • olive oil
  • lime juice
  • salt

Instructions

  1. Cube 2 mangos.
  2. Slice peppers, green onions and cilantro (stems too).
  3. Finely dice red onion, garlic and jalapeño (add a little at a time!).
  4. Drain and rinse the black beans.
  5. Combine everybody in a salad bowl, add a few good splashes of olive oil and lime juice, and a good dash of salt and toss thoroughly.
