MAKING YOUR OWN FRESH SAUCES, SALSAS AND OTHER CONDIMENTS IS SUPER FUN AND SURPRISINGLY EASY! PLUS THEY’RE WAY TASTIER THAN STORE-BOUGHT CONDIMENTS, WITH NO GROSS PRESERVATIVES, COLOURS OR STABILIZERS! MAKE THEM FRESH FOR YOUR MEAL AND KEEP THEM IN THE FRIDGE FOR A WEEK OR SO. THEY MAKE A LOT OF MEALS A LOT MORE FUN!
APPLE SAUCE
Apples, water, ground cloves, ground cinnamon and ground nutmeg. OPTIONAL: honey.
Great on it’s own, on Hot Cereal or with pork chops!
BRUSCHETTA
CASHEW SAUCE
Garlic, Thai chili, ginger, red onion, cashews, olive oil, rice vinegar, soy sauce (or fish sauce), lime juice, maple syrup (or honey), sesame oil and water.
Great on rice bowls like Dragon Bowls or our Vegan Tempeh Rice Bowl!
CHEESE SAUCE
Butter, flour, milk, cheddar or a mix of cheeses, salt, pepper and lemon juice. OPTIONAL: dijon mustard, ground nutmeg.
Great for a Mac’n’Cheese or on roasted veg!
CURTIDO
Green or savoy cabbages, medium-sized white or yellow onions, carrots, jalapeño, garlic, whole cumin, dried oregano and salt.
Great as a side dish or in a Ruben or breakfast sandwich!
ENCHILADA SAUCE
Dried ancho chilies, water, white onions, garlic, salt, chipotle purée, olive oil, fine cornmeal, veg or chicken broth, can of tomato paste, lime, chili powder, dried oregano, ground cumin and salt.
Great on enchiladas, or in burritos, fajitas, tacos or Spanish Rice!
MISO SAUCE
Garlic, ginger, Thai chili, miso paste, olive oil, apple cider vinegar, rice vinegar, lime juice, maple syrup (or honey), soy sauce and sesame oil.
Great on rice like Dragon Bowls or our Vegan Tempeh Rice Bowl!
PESTO
Garlic, basil, parmesan, pine nuts or any tree nut (we use cashews!), olive oil, salt and pepper.
Great on pasta or as a pizza sauce!
PORTUGUESE SALSA
Red peppers, celery, green onions, olive oil, red wine vinegar, salt and pepper.
Great with Little Fish as a side or on it’s own as a crunchy salad!
SALSA
Red pepper, red onion, garlic, jalapeño pepper, cilantro, can of tomatoes (or fresh!), limes, olive oil and salt.
Our favourite condiment here at EVK! Salsa is great for burritos, fajitas, tacos, huevos rancheros and roast potatoes. It makes a great dip for nachos or marinade for tofu or chicken. You can add it when you’re cooking rice to add colour and heat!
TARTAR SAUCE
Yogurt, dijon mustard, dill pickles, curry powder or ground turmeric, salt, pepper, lemon juice and white wine vinegar.
Great with pankoed (breaded) cod as part of Dutch Night!
TOMATO SAUCE
Olive oil, onion, garlic, salt, pepper, carrots, celery, flour, dried oregano, basil, rosemary, bouillon cubes or broth, can of tomato paste, can of diced tomatoes and water.
Great on pasta, as a pizza sauce or in Lasagna or Eggplant Parmesan!
TZATZIKI
Dill or chives, garlic, cucumber, yogurt (pressed or Mediterranean-style work best!) and salt.
Great in Souvlaki or a sandwich; on toasted flat bread or as a dip for veggies!
