VEGAN DASHI

EVK’s vegan dashi with shiitakes and 3 kinds of sea veg!

Ingredients

  • 8 cups of water
  • 2 sheets of kombu
  • 9 dry shiitakes
  • 2 tbsp chopped dry dulse
  • 1 tsp dry wakame

Instructions

  1. Rinse excess salt off kombu under the tap.
  2. Set a deep pot of water on high heat.
  3. Add kombu, shiitakes, dulse and wakame.
  4. Bring almost to a boil, then reduce heat to low and simmer for as long as possible; all day is awesome, but 20 mins will do if you’re hungry now!
  5. Filter with a fine mesh so that your broth is completely clear.
